What you should know before you buy.
Indian chilli is bought on two numbers: pungency measured in SHU and colour measured in ASTA units. Teja (S17) is the high-heat variety at roughly 75,000–100,000 SHU and is favoured in oleoresin extraction and hot sauces. Sannam (334) is the versatile mid-heat workhorse. Byadgi and Kashmiri chillies are prized for deep red colour with mild heat, giving that rich colour to curries and tandoori preparations without burning.
We buy each variety from its own belt in arrival season, cold store where necessary, and supply whole with stem, stemless, or milled to your mesh. Aflatoxin and pesticide residue testing is available to EU limits, and lots are fumigated and certified before stuffing.
