Makhana, or fox nut, is the popped seed of the prickly water lily grown in the ponds of Mithilanchal in Bihar — the region that produces the overwhelming majority of the world's supply. Seeds are harvested by hand, sun-dried, roasted in iron pans and popped, then hand-graded. Grading is measured in 'suta': the higher the suta, the larger and whiter the popped nut, and 6 suta and above is considered premium export grade.
Nutritionally it is a rare combination — low fat, gluten free, high in plant protein, magnesium and antioxidants — which is why it now sells as a healthy snack base across the US, Europe and the Gulf. We supply plain popped makhana for repacking, roasted grades for direct snacking, and flavoured makhana such as peri-peri, cheese, cream and onion or himalayan salt made to your recipe.
